Seared Veal Fillet with Wasabi Butter

The tender veal goes perfectly with wasabi butter creating a dish loved by everyone

Ingredients
- Veal (90g)
- Salt (1g)
- Pepper (0.20g)
- Sesame Oil (10g)
- Unsalted Butter (5g)
- Chives (2g)
- Sauce or Au Jus (15g)
- Wasabi Butter
- Kizami Wasabi (3g)
- Unsalted Butter (25g)
- Soy Sauce (1.5g)
- Lemon Juice (1g)
- Salt (0.20g)
- Pepper (0.05g)
Directions
- 1Set the butter to room temperature. Mix all the ingredients of Wasabi Butter in a bowl and mix
- 2Sear the veal with the sesame oil in a pan, add the butter, salt and pepper .
- 3Use the juice from the meat to create a sauce or au jus
- 4Place the sauce on the plate, add the veal and top with the wasabi butter and chives
