[Recipe] Beets Salad with Yuzu vinaigrette

This recipe is perfect for the holiday season to bring to your next gathering. Wow your guests by whipping together this easy and healthy salad that everyone can enjoy!

(Yuzu vinaigrette)
½ tbsp yuzu juice
1 tbsp lemon juice
1 tbsp orange juice
3 tbsp yuzu oil
2 dates
1 tsp dijon mustard
¼ tsp paprika
Pinch of salt & pepper


1 beets (sliced)
2 cups arugula
¼ cup fennel (sliced)
¼ zucchini (sliced)
½ cup tomatoes
¼ cup cooked wild rice

1.In a blender, place yuzu juice, lemon juice, orange juice, yuzu oil, dates, dijon mustard, paprika, salt and pepper then mix well.
2.Cut the individual vegetables then place it on a plate.
3.Drizzle the dressing on top.
4.Ready to serve.
